Here are a few easy fish dishes that you can prepare instantly!

  1. Herb-roasted Atlantic Salmon with crispy potato chips


½ a lemon

Potatoes, thinly sliced

1 tablespoon olive oil

Ground black pepper and salt, to taste

2 fresh Salmon fillets

2 springs of tarragon/aniseed

¼ parsley, finely chopped

8 basil leaves

1 garlic clove finely chopped


Season the Salmon fillets with salt and pepper. Mix the tarragon, parsley, basil, garlic and a tablespoon of olive oil in a medium-sized bowl. Coat the fillets with the herb mixture. Place the salmon in a small baking dish and roast until the fish is flaky and almost cooked through for about 10 minutes. Remove the dish from the oven, cover with aluminum foil and set it aside to rest for 10 minutes. Fry the thinly sliced potatoes and season with salt. Squeeze the lemon on the fish and serve hot.

         2. Fish stew with tomatoes, ginger, and potatoes


2 large potatoes, sliced

1 tablespoon olive oil

2 inches ginger, finely chopped

1 can of crushed tomatoes

1 cup chicken stock

½ cup water

¼ teaspoon crushed red pepper

Salt, to taste

Any deboned fish

2 tablespoons chopped parsley


Steam the potatoes. Mix the crushed tomatoes, chicken stock, ginger, red pepper, and salt. Simmer briefly. Add the fish and after a few minutes, the entire dish is done. It’s practically instant, low in fat, and satisfying.

             3. Fish fillets in cherry tomato sauce


2 teaspoon olive oil

4 fish fillets

Salt and pepper, to taste

1 medium-sized onion, thinly sliced

600g cherry tomatoes

2 teaspoon finely chopped parsley


Heat olive oil in a nonstick skillet over medium-high heat. Season the fish with salt and pepper and place in skillet, skin side down. Cook until skin is browned and crisp for about 4 minutes. Remove from skillet and set aside. Add onions to pan and season with salt and pepper. Keep stirring until soft for about 4 minutes. Add the tomatoes, cover with lid, and cook for 8 minutes until they start releasing their juices. Add the fish, skin side up, and cook for 3 to 4 minutes. Sprinkle with parsley before serving.

             4. Crispy and Crunchy cornmeal fish sticks


4 large egg whites

Fish fillets cut into 1X3 inch strips

½ cup Maida

Salt & Pepper, to taste

1 cup cornmeal

1 cup vegetable oil


In a large bowl, whisk together egg whites, 2 teaspoons salt, and 1/4 teaspoon pepper. Add the fish, and toss to coat. In another large bowl, combine cornmeal and Maida. Season with salt and pepper. Lift fish from egg-white mixture and coat in cornmeal mixture. In a large skillet, heat oil over medium-high. Cook fish until golden brown and opaque throughout, 4 to 6 minutes, turning once (if fish is browning too quickly, reduce heat). Serve with ketchup.

           5. Tender and caramelized Atlantic Salmon


½ cup sugar

2 ½ tablespoons of sea salt

Freshly crushed black pepper

4 Salmon Fillets, with skin

Olive oil


Combine the sugar, salt, and black pepper in a shallow bowl. Dip each filet into the bowl and coat the entire surface of the salmon with the sugar/salt mixture. Heat olive oil in a large nonstick skillet over medium heat. When the oil is hot, add the salmon, skin side down in the pan and sauté for about 5 minutes. Flip each salmon fillet and sauté for another 2-3 minutes. Flip to the side and sauté each of the sides for another 2-3 minutes, if the filet is thick enough. Preheat the broiler to 450 degrees. Sprinkle the mixture on top of each salmon fillet. Transfer the pan from the stovetop into the oven. Let the salmon broil for 5-10 minutes, checking occasionally to make sure it’s not burning. When the salmon is done, remove from the oven and let it rest for a few minutes.
